What makes this knife elite? Its core of SG-2, an exotic Japanese powdered steel that is at once incredibly durable, smooth, flexible, and chip resistant. The core is clad with two layers of SUS410, a softer stainless steel that provides additional strength and corrosion resistance. The blade is then honed to an acute 16-degree angle for the sharpest cutting edge possible. It will retain its edge several times longer than comparable stainless cutlery. The Shun Elite Paring Knife is hand crafted in Japan and possesses design elements from traditional samurai swords. The "Hamon," or clay-baked design on the edge of the blade, is one samurai trademark. The inlaid Japanese emblem and rings of copper and brass on the handle are others.
